1 Beating eggs and milk with rotary beater or whisk
2 Heat butter in non-stick frying pan and add shallots
3 Stir the egg mixture while cooking

skim milk ¼ cup (60ml)
butter 10g
green shallots 2, finely sliced
Weight Watchers Cheese 60g, grated
wholegrain bread 4 x 35g slices, toasted

1 Break eggs into a mixing bowl and add milk. Season with salt and black pepper and lightly whisk with a rotary beater, whisk or fork.
2 Heat butter in a medium non-stick frying pan and add shallots. Cook, stirring over low heat for 2 minutes or until softened. Add egg mixture and cook over medium heat, while stirring occasionally, for 3 minutes or until just set.
3 When eggs are nearly cooked add grated cheese and stir once, cover for 30 seconds or until melted. Serve immediately with toast.

Note: Be sure not to over-stir the egg mixture while cooking; just a couple of times to form large curds in the mixture.
