Filling & Healthy frozen mixed berries 500g
caster sugar 2 tbs
cornflour 1 tbs
Filling & Healthy eggs 2
caster sugar 1/3 cup (75g), extra
self-raising flour 1/3 cup (50g), sifted
custard powder 1 tbs
flaked almonds 2 tbs


1 Preheat oven to 180°C. Spray a 5-cup (1.25 litre) deep ovenproof dish with oil.

2 Place frozen berries in prepared dish. Add sugar and cornflour, toss to coat berries. Stand 20 minutes or until partially thawed.

3 Using an electric beater, beat eggs for 3 to 4 minutes or until thick and creamy. Gradually beat in caster sugar until dissolved. Fold in sifted flour and custard powder.

4 Spread sponge mixture over berries. Sprinkle with almonds. Bake for 35-40 minutes or until sponge is cooked when tested with a skewer. Serve immediately.

Note: If almonds start to become too brown, cover cake loosely with foil halfway during baking.

Delicious variations for the mixed berries
Choose fruits that are in season. If using fresh fruit, place peeled and chopped fruit in a saucepan, cover with water and simmer for 5 minutes or until soft.
