A Christmas seafood feast

Seafood at Christmas is fast becoming Australian's preferred way of celebrating the big day.

Our seafood menu consists of a starter, entrée, main, side dish and dessert, so we’ve kept the emphasis on seafood. The best thing is that a lot of the preparation can be done in advance which will really take the stress out of your day. Also, all of the seafood can be cooked outside on the barbeque, leaving your kitchen and house odour free!

You can’t beat enjoying chargrilled squid as a pre dinner appetizer with a glass of wine. We’ve marinated this virtually fat-free food in a sweet and salty Thai sauce which we’ve made ourselves. This squid can marinade up to 1 day in advance too.

Your seafood inspired Christmas wouldn’t be the same if you didn’t serve an Aussie prawn cocktail. We’ve added a little twist by using avocado, plus made our own cocktail sauce. Make the sauce in advance, then assemble on the day.

Barramundi is a tasty Aussie fish, perfect for celebrating your Christmas day lunch. We’ve kept the Australiana theme and teamed it with a homemade macadamia pesto, serving it on a bed of rocket. The pesto can be made a day in advance and stored in the fridge.

Asparagus is a particularly delicious side to serve with seafood. We’ve tossed this seasonal vegetable in a simple yet zesty lemon and garlic sauce, so it’s perfect to serve as a side dish to your Barramundi.
