Quick and easy curried prawns is ready in 40 minutes and jam packed full of tasty veggies.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, chopped

Celery

2 stick(s), thinly sliced

Tomato(es)

1 large, deseeded, chopped

Curry powder

2 tsp, (mild)

Plain flour

1½ tbs

Skim milk

1 cup(s), (250ml)

Vegetable stock

¾ cup(s), (185ml)

Zucchini

2 medium, halved lengthways, sliced

Frozen green peas

½ cup(s), (60g) thawed

Raw peeled prawns

500 g, peeled

Fresh flat-leaf parsley

2 tbs, to serve

Instructions

  1. Heat oil in a deep non-stick frying pan over medium heat. Add onion and celery and cook, stirring occasionally, for 7 minutes or until softened. Add tomato and cook for 3 minutes or until softened.
  2. Add curry powder and flour and cook, stirring, for 1 minute. Gradually add milk and stock, stirring constantly, until smooth and combined. Add zucchini and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until slightly thickened.
  3. Add peas and prawns. Simmer for 3 minutes or until prawns are just cooked through. Season with salt and pepper. Serve sprinkled with parsley.

Notes

SERVING SUGGESTION: Steamed basmati rice. TIP: To deseed the tomato, cut it in half and use a small spoon to scoop out the pulp and seeds.
