Ingredients

2 small banana, (ripe)
|
|
2 serve (s) egg yolk, (2 egg yolks)
|
|
|
6 tsp (s) sugar
|
|
|
1/4 cup (s) black coffee, brewed, cooled
|
|
|
1 tsp (s) vanilla essence
|
Instructions
- Peel bananas, slice and divide between two individual serving bowls.
- Bring 3 cm of water to the boil in a small saucepan over medium heat. In a clean medium-sized bowl, whisk yolks and sweetener until pale and frothy. Add coffee and vanilla and continue to beat.
- Place bowl over saucepan of simmering water and cook whisking until thick and foamy and doubled in volume. This usually takes 3-4 minutes. Remove bowl from saucepan and continue whisking off heat for 1 minute. Divide sauce between serving bowls and serve.
Notes- If bananas aren't your cup of tea, then substitute them with strawberries or raspberries.
