I made these with Portugest Chicken Seasoning instead of Italian seasoning. End result...a hot, crunchy, healthy snack which I found quite satisfying. I served them with a little tomato sauce.

i didnt beat the eggs enough so frothy on top & runny underneath :(. Also I cooked them for about 25mins as I was worried the zucchini would still be raw. Cooked perfectly!! Very yummy recipe. Great use of all these zucchinis we have in the garden atm.
