This one turned out great! I thought it was more like a stew than a soup, but it didn't affect the flavour. I also subbed in the green beans for the zucchini.
Great soup for lunch with low points.
Use this recipe regularly - good to have in the freezer for unexpected visitors and is always popular. I have added fresh kale instead of zucchini and use fresh oregano not dried. Have also add a chopped red chilli to spice it up a bit.
