Ingredients

100 g ginger biscuits   
25 g butter   
405 ml Nestle , Condensed Milk, Sweetened, Skim   
  1 small egg(s), lightly beaten   
  1 medium egg white   
  2 medium fresh lemon(s), rind finely grated, plus juice   

Instructions

  • Preheat the oven to 180C.

  • Place the biscuits in a food processor and pulse until fine. Alternatively, place them in a plastic bag and crush using a rolling pin. Transfer to a bowl.

  • Melt the butter in a small saucepan over low heat. Add the biscuit crumbs and carefully press the mixture into the base of a 23cm cake tin. Refrigerate until required.

  • Place the condensed milk and eggs in a bowl. Beat until smooth. Add the lemon zest and juice and stir well. The mixture will begin to thicken. Pour into the prepared base.

  • Bake the tart for 20 minutes, then remove from the oven and allow to cool completely. Refrigerate until set.

  • Decorate with a slice of lemon just before serving.

Notes

  • This tart will keep in the fridge for up to 1 week in an airtight container.

    For a different citrus flavour, try using the zest and juice of 2 juicy limes in place of the lemons.

This is one of my favourites. I have tried it with the limes as well and they are both delicious. I usually make it in a square tin for easier cutting.

Fantastic dessert! Tastes as good as, or better than, a bakery-made lemon tart. My daughter made me this as a birthday cake. Loved it!

I made this for a bring a plate function at work. It disappeared very quickly and Ii did not get a slice but the compliments were flowing

Easy to make, I love the no fuss. I used two small whole eggs, which increased the points slightly? but saved the hassle of having a spare yolk hanging about. A decent sized treat to take to dinner parties and no-one knows its WW!
